2011 1st Place Gold Winners - AHF Chicago-Midwest Chapter Culinary Challenge

ELMHURST, IL | NOVEMBER, 17 2011 Executive Chef Kevin Risner from Village Woods, a retirement and assisted living community in Crete, IL and Executive Chef Tom Corley, from the Corporate Offices of Providence Life Services in Tinley Park, IL took first place gold honors and the People’s Choice Award in the 2011 Culinary Challenge of the Chicago-Midwest Chapter of the Association of Healthcare Foodservices (AHF) Chapter on Friday, November 18. The winning dish was Crusted Duck with Ligonberry Sauce topped with gingered Julian sweet potatoes.

Taking the second place silver award was Victor Olivera, Hugo Lopez and Edward Topel from The Garlands of Barrington, with their Duck with Grand Marnier Sauce accompanied with sweet mashed potatoes.

The third place bronze award went to Jim Roth, CEC, Yanka Manikatova and Martez Perry from Elmhurst Memorial Healthcare, for their Cranberry Lacquered Duck Breast, Smashed spicy sweet potato, blazed baby carrots and swiss chard.

Commenting on the competition, AHF Chapter President Mark Trnka said, “The level of culinary excellence displayed by all five teams is indicative of the outstanding cuisine being offered in hospitals and senior living communities.”

The other two teams who competed this year included Jim Denvir Executive Chef, Edgar Perez and Jesler Reyes from Little Company of Mary Hospital for their Sautéed duck in olive oil seasoned with salt and paper, cranberry coulis, and sautéed root vegetables with fresh rosemary, and Johann Lustenberger Executive Chef and Justin Klobuca Chef with Mary and Elizabeth Medical Center for their Gerasian Duck Breast, Fauxchi, Chinese green bean braid, and mushroom foam.

The teams and their dishes were judged on organization, time management, culinary skills, originality, and taste and plate presentation. As first place winners, chefs Kevin Risner and Tom Corley were awarded the AHF gold medal, along with the People’s Choice Award with a total 186 out of 180 points (including 15 "extra credit" points for emailing their recipe ahead of time). The second place winners were awarded the AHF silver medal and the bronze medal was awarded to the third place winner. All participating contestants received a certificate of recognition for their demonstrated culinary talent and creativity. The team of judges consisted of 1) William D. Anderson, Publisher of Foodservice Director Magazine, 2) Billye Potts, Executive Vice President, Association for Healthcare Foodservice (at FSA Group) and 3) Gerald J. White, Associate Publisher of Plate Magazine.
